| 4 | lean loin pork chops |
| 1 | clove garlic, halved |
| salt | |
| fresh ground black pepper | |
| 1/4 | teaspoon cinnamon |
| 1 | cup apple juice |
| 1 | large sweet potato, peeled and sliced |
| 1 | whole cloves |
| 2 | apples, cored and sliced |
| 1 | tablespoon cornstarch |
| 1/4 | cup water |
| 1 | tablespoon cider vinegar |
Rub both sides of the pork chops with the garlic
and sprinkle with salt and pepper. Spray a large
skillet with vegetable cooking spray and heat
over medium-high heat. Add chops and brown
on both sides.
Meanwhile, blend 1/2 teaspoon salt, cinnamon,
and cider in a small bowl. Add the cider mixture,
sweet potatoes, and clove to skillet. Reduce heat,
cover and simmer 30 minutes.
Uncover skillet and add the apples; simmer 5
minutes more. With a slotted spoon, transfer
the pork, potatoes, and apples to a worm
platter and keep warm.
For sauce, blend the cornstarch with the water
in a small bowl. Stir in the vinegar. Add the
cornstarch mixture to the skillet and simmer,
stirring, 5 minutes, until thickened.
Serve sauce with pork, sweet potatoes, and apples
