REMOVE GIBLETS FROM HENS AND SAVE FOR

PLACE BIRDS BREAST UP IN A SHALLOW 12 X 15
INCH PAN. MIX ORANGE PEEL, JUICE, CORNSTARCH,
SOY AND CHILIES; POUR EVENLY OVER BIRDS.
BAKE IN A 450 OVEN, BASTING EVERY 10 TO 15
MINUTES, UNTIL MEAT IS NO LONGER PINK AT
THIGHBONE, 30 TO 40 MINUTES, CUT TO TEST.
PLACE BIRDS ON WARM PLATES. SKIM FAT FROM SAUCE;
POUR SAUCE INTO A BOWL. SPOON ONTO BIRDS TO TASTE
