| 4 | cups water |
| 1 | cup chopped large yellow onion |
| 1 | thinly sliced carrot |
| 1 | thinly sliced celery stalk |

| 1 | bay leaf |
| 1/2 | teaspoon dried thyme |
| 1/2 | pound cooked turkey kielbasa sausage |
| 2 | tablespoons olive oil |
| 3 | tablespoons tomato paste |
| 2 | cloves minced garlic |

SOAK BEANS IN WATER OVER NIGHT.
DRAIN BEANS AND ADD 4 CUPS OF WATER,
ONION, CARROT, CELERY, 1 tsp SALT, BAY
LEAF AND THYME. COVER POT AND
SIMMER 45-60 MINUTES UNTIL BEANS
ARE TENDER. MEANWHILE, CUT SAUSAGE
INTO 1/2" DICE. HEAT OLIVE OIL IN A SKILLET
AND BROWN SAUSAGE FOR 5 MINUTES,
STIRRING FREQUENTLY. DRAIN ON PAPER
TOWEL DRAIN COOKING LIQUID FROM BEANS,
SAVING 1 1/2 CUPS (ADD WATER IF NECESSARY).
TO BEANS, ADD TOMATO PASTE, GARLIC, SALT AND
PEPPER TO TASTE. BLEND WELL.
PLACE HALF THE BEANS IN 2 QT CASSEROLE,
ARRANGE SAUSAGE OVER BEANS, TOP WITH
REMAINING BEANS, AND POUR IN RESERVED
LIQUID TO JUST COVER INGREDIENTS.
BAKE COVERED IN 350 DEGREE OVEN 45 MINUTES.
