| 1 | teaspoon vegetable oil |
| 1 | cup finely chopped onion |
| 1 | red bell pepper, diced |
| 1 | tablespoon chili powder |
| 1 | teaspoon cumin |
| 1/4 | teaspoon ground red pepper |
| 1 | teaspoon minced garlic |
| 1 1/2 | pounds ground turkey, beef or chicken |
| 2 | cups fresh bread crumbs |
| 1/3 | cup ketchup |
| 2 | tablespoons ketchup |
| 1/3 | cup low fat milk |
| 1 | egg |
| 1 | egg white |
| 1 | teaspoon salt |
| 1/2 | teaspoon fresh ground black pepper |
Preheat oven to 350 degrees. Heat the oil in a medium
nonstick skillet over medium heat. Add the onions and
red pepper. Cook, stirring occasionally, 5 to 10 minutes,
until tender. Stir in the chili powder, cumin, ground red
pepper, and garlic and cook 30 seconds more.
Transfer the mixture to a large bowl and cool.
Add the turkey to the vegetable mixture with the bread
crumbs, 1/3 cup plus 2 tablespoons ketchup, milk, egg,
egg white, salt and pepper and mix well. Pat the meat
mixture into a 9x5-inch loaf pan. Bake 75 to 80 minutes.
Let stand 10 minutes before slicing.
