Blackened Bass

4 servings

4 6 ounces sea bass, fillets
2 tablespoons water
1 tablespoon hot pepper sauce
2 teaspoons onion powder
2 teaspoons garlic powder
2 tablespoons paprika
1 teaspoon dried thyme, crushed
1 teaspoon dried oregano, crushed
2 teaspoons black pepper
2 to 1 teaspoon cayenne pepper
vegetable cooking spray
1 tablespoon butter or margarine

Rinse fillets with cold water; leave damp, and place in a shallow dish.

Combine 2 tablespoons water and hot sauce in a small bowl; pour over fillets.
Cover and marinate in refrigerator 2 hours, turning once.

Combine next 7 ingredients. Remove fillets from marinade,
discarding marinade; dredge in spices to coat well.

Coat a large cast-iron skillet or heavy non-stick skillet with cooking spray;
add margarine, and place over high heat until margarine melts.
Add fillets, and cook 2 to 3 minute on each side, turning carefully till fish is done.
You might want to do this outside to avoid the small amount of smoke
that is created, fillets should looked charred. Serve at once

This recipe works well with shark fillets too
