WINE-BAKED FILLETS

4 servings
1 pound frozen fish fillet
1/4 cup dry white wine
1/2 teaspoon dried oregano, rushed
1/2 cup shredded swiss cheese, (2 ounces)
2 medium carrots, cut into julienne strips
2 stocks celery, cut into julienne strips

Place fish in a greased 10x6x2 inch baking dish. Season with salt & pepper
Pour wine over fish, sprinkle with oregano. Bake covered, in a 350 oven for 35 minutes.
Sprinkle fish with shredded swiss cheese. Bake uncovered, 5 to 10 mnutes more
or until fish flakes easily when tested with a fork. Meanwhile, in medium saucepan
cook carrots and celery strips in a small amount of boiling salted water about 10
minutes or just till tender. Drain
Cut fish into 4 equal portions. Transfer fish to a serving platter, spoon some of
the fish juices atop. Arrange carrot and celery strips around fish on the platter.
