Baked Halibut Fillets

4 servings

4 Halibut Fillets,or other white fish, such as mahi mahi
1/2 tsp salt
1/4 black pepper (or fresh ground to taste)
5 oz heavy cream
1 cup dry white wine
1 Bay Leaf
1 Tbsp chopped fresh chives
1/2 tsp dried tarragon
1 Tbsp fresh lemon juice
1 Tbsp cornstarch disolved in 2 Tbsp white wine
1/2 cup grated Parmesan Cheese

 

Preheat the oven to 375 degrees.

Rub the fillets with the salt and pepper and arrange them
in a baking dish. In a medium bowl, combine the cream, wine,
bay leaf, chives, chervil or tarragon, lemon juice and the cornstarch mixture.

Pour sauce over fish in the baking dish. Sprinkle on the grated cheese.

Bake in the preheated oven for 25 to 30 minutes, or until the
cheese has melted and the fish flakes easily with a fork.

Remove the dish from the oven, discard the bay leaf.
Serve immediately, straight from the dish.
