| 1/2 | cup chopped green bell pepper |
| 1/2 | cup chopped onion |
| 2 | tablespoons butter or margarine |
| 6 | each eggs |
| 3/4 | cup Pace picante sauce |
| 1/2 | teaspoon garlic salt |
| 1/2 | teaspoon cumin |
| 1 1/2 | cups cheddar cheese, or jack cheese, shredded |
| 8 | each 10-inch flour tortillas |
| 1 | whole sliced avocado |
Cook green pepper and onion in butter in 10-inch skillet
until tender
but not brown. Stir in eggs, 1/4 cup Pace Picante
Sauce, garlic salt and
cumin. Cook over medium-low heat,
stirring frequently, until eggs are set.
Remove from heat,
stir in one cup of cheese. Fill flour tortilla with egg
mixture;
add one tablespoon of remaining cheese and desired amount
of remaining
picante sauce. Top each with avocado.
